Cajun food is known for being very well seasoned although not always spicy and is often a ‘one pot’ meal. Boudin & andouille sausages and ‘blackened’ meats are popular Cajun foods. The backyard crawfish boil is another byproduct of the Cajun Culture.

Creole food is a cosmopolitan food created in New Orleans with European, African & Native American roots. Creole foods often contain tomatoes and tomato sauces where Cajun food does not. The essence of Creole is in the use of a vast array of spices from various regions, rich sauces and creamy soups. Think shrimp remoulade, Creole jambalaya and seafood bisque.

Alberta beef is known worldwide for its quality and tenderness. Beef, along with the many game meats of the area are ideally suited for cooking quickly over a grill, stir fried or roasted and served with a light sauce, salad and vegetables. And of course, you can’t get more Canadian than maple glazed BC salmon on a cedar plank served with a Bloody Caesar to drink!
